Chocolate Chip Granola Bars

  • 3 c. slow cook rolled oats
  • 1& ¾ c. whole wheat flour
  • ¼ c. ground flax
  • 1 tsp baking soda
  • ¾ c. pitted dates, chopped well
  • ½ c. raw, unsalted sunflower or pumpkin seeds
  • ¾ c. unsweetened shredded coconut
  • ½ c. dark chocolate chips
  • ½ c. unsweetened applesauce
  • ½ c. maple syrup
  • 1 egg + 1 egg white
  • 3 tbsp unsweetened almond milk (or skim milk)
  • 2 tsp vanilla
  • ¼ tsp salt
To make
  1. Preheat oven to 350F and grease a 13 x 9 inch baking pan (or line with parchment).
  2. In a large bowl, combine the rolled oats, flour, ground flax, baking soda, dates, seeds, coconut and chocolate chips.
  3. In a medium bowl, beat together applesauce, maple syrup, egg, egg white, milk, vanilla and salt.
  4. Add the wet mixture to the dry, and mix until just combined.
  5. Press into the pan, and bake for 22-23 minutes until top is golden.
  6. Remove from oven and allow to cool. Cut into 25 bars.
  7. Transfer to an airtight container and refrigerate or freeze.
